Simply Fresh Fennel Salad
Serves 2






Fennel's fiber, potassium, folate, vitamin C, vitamin B-6 and phytonutrient content, coupled with its lack of cholesterol, all support heart health. Fennel contains significant amounts of fiber, which helps lower the total amount of cholesterol in the blood, thereby decreasing the risk of heart disease.


INGREDIENTS

1 bulb fennel, thinly sliced
¼ medium size red onion, thinly sliced
Half the leaves of the fennel bulk, roughly chopped
¼ teaspoon sea salt
Pinch fresh pepper
Pinch fennel seeds - optional
1-teaspoon white wine vinegar or if you like apple cider vinegar us that
1-teaspoon extra virgin olive oil

INSTRUCTIONS

1.  Mix all ingredients together in a bowl.

2.  Serve immediately and garnish with additional fennel leaves.

INGREDIENTS

1 large mango
½ cup blackberries
¼ cup fresh cilantro leaves
1 teaspoon flax seeds
¼ teaspoon sea salt
2 large tablespoons Greek or cream top yogurt
Squeeze lemon

INSTRUCTIONS

1.  Peel and chop mango into cubes and put in a bowl.

2.  Add blackberries, cilantro, flaxseeds, and sea salt and toss.

3.  Add yogurt and squeeze of lemon and toss and serve.
